My husband groans when I tell him I'm making a Gluten-Free baked good. I can understand why. No matter what I make, the consistency is usually gritty, oily, and heavy (think brick). My son was born with A LOT of allergies and those early days were rough. I can still remember his first birthday cake. Gluten-fee, dairy-free, nut-free, soy-free, might as well throw in flavor-free, texture-free and yummy-free while we are at it. His cake was a dark brown, rice-based, gelatinous mess (see above cake). That was about 10 years ago before we had too many alternative recipes in cookbooks and online. Thankfully those days are behind us and I actually have an awesome recipe for all of you who want a GF recipe that actually tastes good! This is a delicious GF banana bread that will impress all. This recipe can be especially helpful for all of you who don't normally do GF baking, but are asked to do so for an upcoming holiday event. Heck, maybe you have a GF relative or friend coming over and you want to make something special for them. I say, "Go for it".
